The 2 Questions for Every Food
- 1. Is it still whole, the way it grew? Does it still carry its core, its fiber, its package?
- 2. What has the factory done to it? The longer the ingredient list, the further from the original.
The Simple Swaps
- White flour → whole grain and sourdough
- Sugary drinks and juice → water and whole fruit
- Margarine and refined oil → butter and olive oil
- Factory sugar → honey in measure or whole fruit
- Refined white salt → sea salt or rock salt
- Ready-made products → home-cooked with few ingredients
The Plate
- Base: vegetables and herbs, legumes, whole grain, fruit
- Protein: legumes with grain, eggs, fish, fermented dairy, meat in moderation
- Fat: real butter, cold-pressed olive oil
- Sweetness: whole fruit, honey in measure
- Drink: water
- Bread: real sourdough from the whole grain
